Baked Soles

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Prepare the potatoes by quartering them if they are large, then place them in boiling water.

  3. Clean the soles by removing the gills and place them in the oven.

  4. Fry the salmon cutlets in a pan until cooked through.

  5. While the cutlets are frying, prepare the salad and strawberries.

  6. Mash the boiled potatoes and season with coarse sea salt.

  7. Serve the baked soles with the salmon cutlets, salad, and strawberries.
