Broiled Tripe

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Place the tripe in the oven for a few moments to draw out moisture; drain and wipe dry.

  3. Trim the tripe into good shape and season with pepper and coarse sea salt.

  4. Dip the tripe in fine cracker crumbs, then in oil or melted butter, and again in the crumbs.

  5. Place in a well-oiled broiler and cook for about five minutes, starting with the honeycomb side.

  6. When done, spread with butter and season with salt and pepper.

  7. Garnish with parsley and a slice of lemon.
