Yellow Bechamel Sauce

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Melt the butter in a saucepan until frothy.

  2. Whisk in the flour, salt, and white pepper until combined.

  3. Gradually add the chicken broth and thin cream, stirring continuously.

  4. Bring the sauce to a boil, then reduce heat and cook over hot water until tender.

  5. Stir lightly with a fork, then pour into a well-buttered ring mold.

  6. Press the rice firmly into the mold and bake in a 400°F (200°C) oven for 4-5 minutes.

  7. Turn out onto a serving dish and fill the center with parsley.
