What each ingredient does

Gelatine
Sets the liquid base so the sherbet holds a smooth, firm body when churned.
Fruit juice
Supplies the main liquid and flavour base that freezes into the sherbet.
Peaches
Add soft texture and natural sweetness to the chilled fruit.
Raspberries
Add tart flavour and colour to the chilled fruit mixture.
Powdered sugar
Sweetens the fruit and draws out juices as it sits.

The step that matters

Chilling the gelatine mixture before churning. Gelatine must be fully dissolved and the mixture cooled before it enters the freezer can; if it is still hot or undissolved, it can set unevenly and leave a grainy or rubbery texture in the frozen sherbet.

Swap the currant

How well each one fits the dish's main ingredients (banana, orange, pineapple, grape, peach, sugar, raspberry):
