Oyster Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Prepare the pie crust and line the pie dish.

  2. Layer the canned oysters in the bottom of the pie, seasoning with spiced pepper and a little coarse sea salt. Continue layering until the dish is filled.

Make the stock

  1. In a saucepan, combine the jellied chicken stock, oyster liquor, mace, and mushroom ketchup or sautéed mushroom caps in butter. Heat the mixture to boiling, skim, strain, and season with salt and pepper.

Bake and serve

  1. Pour the mixture into the pie, cover with the crust, and bake at 350°F (175°C) for about 30 minutes. Before serving, add enough stock to fill the pie.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Canned oysters
Provide the main filling and their briny, savory flavor throughout the pie.
Jellied chicken stock
Adds moisture and body, and sets to a jelly-like texture as it cools.
Butter
Adds richness and fat, carrying flavor in the mushroom and stock mixture.
Mushroom ketchup or fresh mushroom caps
Adds deep, savory umami flavor to the stock.

The step that matters

Heating and straining the stock before filling. Boiling and skimming removes foam and impurities so the stock stays clear and clean-tasting. Straining removes solids, giving a smooth liquid that sets evenly in the baked pie.

Swap the mace

How well each one fits the dish's main ingredients (oyster, pepper, chicken, mushroom, butter):

  1. Thymefits better
  2. Garlicfits better
  3. Parsleyfits better
