Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Roast Turkey Stuffed with Mushrooms

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the stuffing

  1. Preheat the oven to 350°F (175°C).

  2. In a skillet, melt butter and sauté onions and mushrooms until soft.

  3. In a bowl, combine sautéed mixture with bread crumbs, salt, pepper, parsley, and chicken broth.

Roast and rest

  1. Stuff the turkey with the mushroom mixture.

  2. Place the turkey in a roasting pan and roast for about 2 to 2.5 hours, or until the internal temperature reaches 165°F (74°C).

  3. Let the turkey rest for 20 minutes before carving.

What each ingredient does

Turkey
Forms the main body of the dish and carries the stuffing as it roasts.
Bread crumbs
Soak up the broth and butter, giving the stuffing a moist, soft body.
Mushrooms
Add savory, earthy flavor and moisture to the stuffing.
Butter
Adds richness and carries flavor when sautéing the onions and mushrooms.
Chicken broth
Moistens the bread crumbs and keeps the stuffing from drying out.

The step that matters

Stuff the turkey with the mushroom mixture.. Packing the stuffing loosely lets heat reach its center. The stuffing must reach a safe internal temperature, so check the stuffing and turkey together. Dense packing can slow cooking and leave the center undercooked.

Swap the onion

How well each one fits the dish's main ingredients (turkey, mushroom, butter, pepper, bread, chicken, parsley):

  1. Capsicumfits better
  2. Tomatofits better
  3. Shallotfits better
