Why it works: Ginger and clove match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 6,038 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Pumpkin Sauce

Ingredients

Directions

  1. Cut the pumpkin into small pieces.

  2. Place the pumpkin in a pot with just enough water to prevent burning.

  3. Set the pot to stew slowly, stirring often with a wooden spoon.

  4. Cook until all the water has evaporated and the pumpkin turns a dull brown color.

  5. Sweeten with molasses and brown sugar, and season with a dash of ginger and clove.

  6. Let cool and store in a large tin milkpan.
