Shad-roe-and-cucumber Salad

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. In a bowl, combine oil, cayenne, salt, and lemon juice.

  2. Add the cubed cucumber and enough mayonnaise or dressing to moisten.

  3. Rub a salad dish with the cut side of garlic.

  4. Shape the salad mixture in the center of the dish.

  5. Arrange lettuce leaves around the edge.

  6. In another bowl, beat eggs until light, then mix in lemon rind, currants, and citron until smooth.

  7. Line small tins with pastry and fill with the cheese mixture.

  8. Bake at 350°F (175°C) for about 15 minutes or until firm.

  9. Sprinkle with powdered sugar and serve when slightly cooled.
