Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. In a pot, melt butter and sauté chopped onion and celery until soft.

  2. Add chopped turkey giblets and cook until browned.

  3. Stir in chopped tomatoes and season with salt and pepper.

  4. Add water and simmer for 30 minutes.

  5. Strain the soup and serve hot, garnished with croutons.
