Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Soak the navy beans overnight in water.

  2. Drain and rinse the beans, then place them in a pot.

Bake

  1. Add the chopped onion, molasses, brown sugar, mustard, salt, and pepper.

  2. Pour in 4 cups of water and stir to combine.

  3. Add the pieces of salt pork on top.

  4. Cover and bake in a 300°F (150°C) oven for 6–8 hours, checking occasionally and adding water if necessary.

What each ingredient does

Navy beans
Provide the bulk and starchy body of the dish once cooked slowly until tender.
Molasses
Adds dark sweetness and a deep, rich flavour during the long bake.
Brown sugar
Adds sweetness and helps the sauce thicken and darken as it cooks.
Salt pork
Adds fat and savoury flavour that seasons the beans as it renders.
Mustard
Adds a sharp, tangy note that balances the sweetness of the molasses and sugar.

The step that matters

Covered baking with occasional water top-ups. Beans cook slowly in the liquid; if it evaporates they can dry out and scorch, while the starch and sugars gradually thicken the sauce. Checking and adding water keeps the beans submerged so they soften evenly.

Swap the onion
