What each ingredient does

Beef
Long simmering turns tough cuts tender and releases flavour into the gravy.
Flour
Coats the meat so it browns well and helps thicken the gravy.
Potatoes
Hold their shape during cooking and add starch that soaks up the broth's flavour.
Onion
Browning the slices adds sweetness and savoury depth to the gravy.
Carrot
Adds natural sweetness and colour while staying firm through the simmer.
Turnip
Adds a mild, slightly peppery sweetness and firm texture to the stew.

The step that matters

Browning the meat in the hot fat. Dry, hot searing creates browned flavour through the Maillard reaction. Crowding the pan or skipping the sear leaves the meat grey and the gravy flatter.

Swap the onion

How well each one fits the dish's main ingredients (beef, potato, pepper, turnip, flour, carrot):

  1. Parsnipfits better
