Why it works: Carrot and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 8,053 recipes. Both carry 2,4-decadienal, which smells seaweed. The science ↓

Braised Partridges

Ingredients

Directions

  1. Truss the partridges as you would a fowl for boiling.

  2. Slice the carrot, onion, and celery; put them with the parsley into a stewpan.

  3. Add the butter and lay the partridge (breast side up) on top.

  4. Cover with slices of fat bacon and add the stock.

  5. Simmer very slowly for two hours.

  6. Brown the buttered bread in the oven, adding more butter if needed.

  7. Place the partridges on the bread.

  8. Rub the gravy and vegetables through a fine sieve, add the marsala, boil briefly, and pour over the birds.

  9. Serve immediately.
