Fowl and Egg Pelau

Directions

Prepare the meat

  1. Fry the minced mutton with salt and coriander seeds in ghee, then set aside.

  2. Mix the remaining minced mutton with ginger, spices, and beaten egg whites; pound into a paste.

  3. Form small balls from the paste and fry in ghee.

Make the egg mixture

  1. Beat the egg yolks with onions, ground ginger, spices, and ghee; heat in a frying pan and add the mixture.

  2. Cook like an omelet, sprinkle with turmeric, and set aside.

Roast the fowl

  1. Rub the cleaned fowl with salt and onion juice, stuff with minced meat, and tie closed.

  2. Baste the fowl with a mixture of turmeric, cloves, cardamom, and curds while roasting.

Cook the rice and serve

  1. Parboil the rice with cinnamon, cloves, cardamom, and black pepper.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton
Forms the main savoury filling and the fried meatballs, giving body and richness to the dish.
Eggs
Egg whites bind the meat paste and yolks set into a firm omelet-like layer.
Rice
Forms the bulk of the dish, absorbing the gravy and spices as it simmers.
Fowl
Serves as the centrepiece, with its stuffing and gravy flavouring the rice.
Ghee
Fat for frying that adds richness and a nutty aroma to the meat and eggs.

The step that matters

Pound the meat mixture into a paste. Mixing minced meat with egg whites and pounding it breaks up fibres and lets the proteins bind, so the balls hold their shape in the ghee rather than crumbling.

  2. Capsicumbetter flavor fit
  3. Shallotbetter flavor fit
  4. Onionthe original

Fit is the average pairing score against mutton, coriander, ghee, ginger, egg, turmeric, clove. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
