Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Trim the crust off the bread and spread it thickly with butter.

  2. Cut the cheese into thin slices.

  3. Knead together the mustard, cayenne, and flour.

  4. Stir the mixture over low heat until creamy.

  5. Layer half the cheese on the buttered bread and pour half the butter over it.

  6. Add the remaining cheese on top and cover with the rest of the butter.

  7. Place in a cheese toaster or Dutch oven, or on a tin dish in the oven at 400°F (200°C) for about 20 minutes.

  8. Serve very hot.
