Mince Pies

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure. The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Butter some patty pans well.

  3. Roll out the puff pastry thinly and line the patty pans.

Fill and seal

  1. Fill each with about 2 tablespoons of mincemeat.

  2. Moisten the edges with water, close carefully with remaining pastry, and trim.

  3. Make a small hole in the center of each pie.

Bake

  1. Bake for 25 to 30 minutes, covering with paper if they brown too quickly.

What each ingredient does

Puff pastry
Forms the flaky, crisp shell that holds the filling.
Mincemeat
Provides the sweet, spiced filling that fills each pie.

The step that matters

Moisten the edges with water and seal carefully. Wet edges help the pastry lids bond to the bases. If the seal is weak, filling can leak out during baking and the pies can open or dry out.
