What each ingredient does

Strawberries
Provide the main fruit flavour and, once bruised, the pulp that colours and sweetens the dish.
Sugar
Adds sweetness and balances the tartness of the strawberries.
Whipped cream
Adds fat and richness, giving the finished dish a light, creamy texture.
Isinglass
Acts as a setting agent so the cream holds its shape when chilled in the mold.

The step that matters

Dip the mold in hot water. Isinglass sets the cream firm, so a brief dip loosens the outer layer for release. Leaving it too long melts the surface and can ruin the shape.
