Oyster Stuffing for Chickens, Etc.

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the stuffing

  1. Melt the butter and pour it over the bread and cracker crumbs in a pan.

  2. Strain the oyster liquor into the mixture, then add the egg, salt, and pepper.

  3. Stir gently to combine without making it pasty, then fold in the whole oysters.

Cook the fowl and gravy

  1. Prepare the fowl by placing it in a small pan with some salt on the bottom.

  2. Add the gizzard, heart, or any small meat pieces, along with 1 cup of drippings.

  3. Pour in 1 cup of hot water, cover with greased paper, and cook in the oven at 350°F (175°C) for about 1 hour.

  4. Remove the paper, baste the fowl with softened butter, and allow it to brown.

  5. After cooking, pour off the grease, add water to the pan, boil, thicken, and strain for gravy.

What each ingredient does

Oysters
Provide the main flavor and tender bites of seafood throughout the stuffing.
White bread crumbs
Form the bulk of the stuffing and soak up butter and liquor to hold its body.
Oyster crackers
Add extra crumb structure and a toasted, savory edge to the stuffing.
Butter
Adds richness and moisture, coating the crumbs so they stay tender rather than dry.
Egg
Binds the crumbs and liquor together so the stuffing holds its shape.

The step that matters

Stir gently to combine. Overmixing develops and toughens the moisture-soaked crumb structure, making the stuffing pasty instead of light. Folding the oysters in last keeps them whole and prevents them from breaking up.
