Lambs' Tongues with Artichokes

Ingredients

Directions

  1. Boil the tongues in cold water for at least 2 hours.

  2. Peel off the outer skin and split the tongues lengthwise in two.

  3. Place the halves in a dish when the roast meat is done.

  4. Glaze the tongues in the baking pan for about 5 minutes until slightly browned.

  5. Cook each artichoke by boiling until tender, then cut in halves and scoop out the fibrous part.

  6. Drain the artichokes well.

  7. Serve a half tongue in a small dish with a half artichoke at each end and a spoonful of brown gravy over the vegetables.
