Philadelphia Fried Oysters

Ingredients

Directions

Prepare

  1. Drain the oysters to remove excess liquid.

  2. In a bowl, mix salt and mustard to form a batter, then gradually add oil.

  3. Spread cracker crumbs in a layer about ½ inch deep on a surface, then place the oysters on the cracker crumbs without stacking them.

  4. Dredge the oysters with more cracker crumbs.

Bread and batter

  1. Pick up each oyster by the beard and dip it in the batter.

  2. Spread bread crumbs on a table and lay the dipped oysters two inches apart.

  3. Turn the oysters over to crumb the other side, then dip them in the batter again.

Fry and serve

  1. Heat the oil until very hot, then drop in the oysters one at a time by the beard.

  2. Fry until dark brown, then remove and sprinkle with salt.

What each ingredient does

Oysters
Main ingredient that becomes the fried centerpiece, cooked through while the coating crisps.
Cracker crumbs
Form the first coating layer that gives the oysters a crisp, browned crust.
Bread crumbs
Form the outer crumb coating that adds extra crunch and browning when fried.
English mustard
Flavors the batter with sharp heat and helps the oil emulsify into it.
Oil
Conducts heat for frying, browning the coating and giving it a crisp texture.

The step that matters

Heat the oil until very hot. Oil that is too cool lets the coating absorb grease and turn soggy, while very hot oil sets the crumbs quickly into a crisp crust and keeps the oyster inside tender.

Swap the mustard
