What each ingredient does

Aspic jelly or consomme
Forms the jelly base that thickens and gives the dressing its body and set.
Salad oil
Provides fat that emulsifies into the jelly, giving a rich, smooth texture.
Vinegar
Adds acidity that gives the dressing its sharp, tangy flavour.
Sugar
Balances the sharpness of the vinegar and lemon with mild sweetness.
Mustard
Its emulsifying compounds help hold the oil and liquid together and add sharpness.

The step that matters

Gradually add the oil and vinegar mixture, a little at a time.. Adding oil slowly while beating lets it disperse into tiny droplets that stay suspended. Adding it too fast can break the emulsion, leaving the dressing oily and separated.

Swap the lemon

How well each one fits the dish's main ingredients (vinegar, sugar, mustard, pepper):

  4. Mangofits less well

Fit is the average pairing score against vinegar, sugar, mustard, pepper. Candidates are from the same food group and used in at least 100 recipes.
