Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Enriches the sauce with fat and flavour while forming the roux base.
Flour
Thickens the sauce as the starch cooks with the butter and liquid.
Cream or milk
Adds richness and a smooth, creamy body to the sauce.
Chicken stock or mushroom liquor
Provides the liquid base and savoury flavour for the sauce.
Mushrooms
Supply the main earthy flavour and texture of the sauce.

The step that matters

Adding the liquid to the roux. Adding cold liquid gradually while stirring continuously keeps the starch dispersed, so the sauce thickens smoothly instead of forming lumps.
