Goose Pie

Ingredients

Directions

  1. Soak the goose pieces in cold water to cover, unsalted, for several hours.

  2. Gradually warm the water and let the goose stew for 4-5 hours without boiling.

  3. Line a deep pudding dish with pastry.

  4. Layer in the goose pieces, chopped giblets, sliced tongue, and sliced eggs, seasoning each layer with pepper, salt, and butter.

  5. If the goose is large, remove the meat from the bones and omit the bones from the dish.

  6. Interspersed with strips of pastry, fill the dish with the gravy from the stew, thickened with flour.

  7. Cover with a thick layer of pastry and brush the top with beaten egg white before baking.
