Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Green Turtle Soup

Ingredients

Directions

  1. Chop the coarser parts of the turtle meat, entrails, and bones.

  2. Add 4 quarts of water, onions, herbs, salt, and pepper; stew for 4 hours without letting it stop boiling.

  3. Strain the soup and add the finer parts of the turtle and green fat simmered in 2 quarts of water for 1 hour.

  4. Thicken the soup with browned flour and simmer gently for another hour.

  5. If there are eggs in the turtle, boil them separately for 4 hours and add to the soup before serving.

  6. If not, add force-meat balls, then the lemon juice and Madeira; mix well and serve.

  7. For mock eggs, mash the yolks of 3 hard-boiled eggs with 1 teaspoon of butter, bind with 1 raw egg, and form into pellets.

  8. Boil the pellets for 2 minutes before adding to the soup.
