Beef A-LA-mode

Ingredients

Directions

  1. Remove the bone from the beef and trim away tough bits.

  2. Bind the beef into a symmetrical shape with a strip of muslin.

  3. Cut the salt pork into strips as thick as your middle finger.

  4. In a saucepan, heat the vinegar and season with shallots, mustard, nutmeg, cloves, allspice, black pepper, and brown sugar.

  5. Simmer for 5 minutes, then boil briefly and pour over the pork in a deep dish.

  6. Let it cool together, then remove the pork and mix the remaining liquid with enough bread crumbs to form a stiff mixture.
