What each ingredient does

Beef
The main cut, seasoned and coloured by the cure and made tender by the long simmer.
Salt
Draws moisture out of the meat and seasons it, helping the cure penetrate.
Saltpetre
A curing agent that helps the meat keep its pink colour and slows spoilage during the pickle.
Brown sugar
Adds sweetness that balances the salt and softens the sharpness of the cure.
Butter (in the method)
Adds richness and fat to the drawn butter served alongside the beef.

The step that matters

Let the brine cool before pouring it over the beef. Hot brine would partly cook the surface of the meat and could curing unevenly, so the cure penetrates slowly and evenly once the brine is cool.
