Directions

Prepare

  1. Parboil the duck with the carrot or onion for flavor. Discard the carrot or onion and soak the duck in fresh water for 30 minutes.

  2. Stuff the duck with bread crumbs seasoned with salt, pepper, sage, and onion.

Roast and baste

  1. Roast the duck until brown and tender, basting with a mixture of butter and water for half the cooking time. Continue roasting, basting with the drippings.

Make the gravy and serve

  1. Add currant jelly and cayenne to the gravy. Thicken the gravy with browned flour.

  2. Serve the duck and gravy in a tureen.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Wild duck
Provides the main meat, which becomes tender and browned during slow roasting.
Butter
Adds richness and helps the skin brown during basting.
Bread crumbs
Absorb juices from the bird, keeping the stuffing moist and flavorful.
Currant jelly
Adds sweetness and a fruity acidity that balances the rich gravy.
Browned flour
Thickens the drippings into a gravy with a toasted, nutty flavor.

The step that matters

Roast the duck until brown and tender, basting for half the cooking time. Basting with butter and water keeps the surface from drying out while fat renders and the skin browns. Continuing to baste with drippings builds flavor and moisture, so the duck stays tender rather than tough or dry.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (carrot, bread, pepper, sage, butter, currant, flour):

  1. Parsnipfits better
  2. Capsicumfits better
  3. Shallotfits better
  4. Onionthe original

Fit is the average pairing score against carrot, bread, pepper, sage, butter, currant, flour. Candidates are from the same food group and used in at least 100 recipes.
