Why it works: Buttermilk and sugar match in chemistry and in kitchens. They rank in the top 9% of all ingredient pairs, and cooks put them together in 2,973 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Huckleberry Shortcake

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the dough

  1. Chop the lard and butter into the salted flour as for pastry.

  2. Add the beaten eggs and dissolved baking soda to the buttermilk.

  3. Combine all ingredients, handling as little as possible.

Assemble

  1. Roll out into two sheets, one ½ inch thick for the upper crust and the other thinner for the lower crust.

  2. Place the lower crust in a greased baking pan and fill with berries.

  3. Sprinkle sugar over the berries and cover with the thicker crust.

Bake and serve

  1. Bake at 400°F (200°C) for 20-25 minutes until browned but not dried.

  2. Serve hot for breakfast with butter and powdered sugar.

What each ingredient does

Lard
Coats flour particles to keep the dough tender and flaky as it bakes.
Butter
Adds flavor and helps create flaky layers in the crust.
Sour milk or buttermilk
Its acidity reacts with the baking soda to lift the dough and adds tang.
Eggs
Bind the dough and add richness and structure.
Baking soda
Reacts with the acid in the sour milk to produce gas that makes the crust rise.
Berries
Provide the fruit filling, bringing moisture and tartness to the shortcake.

The step that matters

Combine all ingredients, handling as little as possible.. Overmixing develops gluten in the flour, which makes the crust tough instead of tender. Stop mixing once the dough just holds together.
