Why it works: Butter and milk are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 81,283 recipes. Both carry (z)-4-heptenal, which smells biscuit, cream. The science ↓
Baked Apple Dumplings
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Preheat the oven to 350°F (175°C).
In a bowl, sift together the flour, cream of tartar, and salt.
Chop the lard into the flour mixture until crumbly.
Dissolve the baking soda in hot water and add it to the mixture, stirring quickly to form a stiff dough.
Roll out the dough to less than ½ inch thick and cut into squares.
Place a prepared apple in the center of each square, then bring the corners together and pinch to seal.
Arrange the dumplings in a buttered baking pan with the seams facing down.
Bake until golden brown, about 25-30 minutes.
Brush the tops with beaten egg and return to the oven for 2-3 minutes to glaze.
Dust with powdered sugar and serve hot with rich sweet sauce.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
