Why it works: Clove and allspice match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 7,874 recipes. Both carry estragole, which smells anise, licorice. The science ↓
Beef A-LA-mode
Ingredients
Directions
Remove the bone from the beef and trim away tough bits. Set aside for soup stock.
Bind the beef into a symmetrical shape with a strip of muslin, stitching the ends together.
Cut the fat salt pork into strips as thick as your middle finger and long enough to fit the beef.
In a saucepan, heat the vinegar and season with shallots, mustard, nutmeg, cloves, allspice, black pepper, minced herbs, and brown sugar.
Simmer for 5 minutes, then boil briefly and pour hot over the pork in a deep dish.
Let it all stand until cold, then remove the pork and mix the remaining liquid with enough bread crumbs to form a stiff mixture.
