Why it works: Sage and nutmeg match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 642 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Sausage

Ingredients

Directions

Prepare the meat

  1. Grind the lean and fat pork in a sausage mill or chop it very fine.

  2. Mix the ground meat with the sage, black pepper, salt, mace, and nutmeg using your hands.

  3. Taste the mixture to ensure the seasoning is correct.

Store or stuff

  1. Pack the sausage mixture into stone jars and pour melted lard on top to preserve.

  2. Alternatively, fill muslin bags with the sausage mixture, dip in melted lard, and hang in a cool cellar.

  3. If using hog intestines, prepare them by soaking in salt and water for three days, then rinse and stuff with the sausage mixture.

  4. Tie the stuffed intestines and hang them in a cool place.

Cook

  1. Fry the sausages in a clean, dry frying pan until brown, about 10-12 minutes, turning once.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean fresh pork
Provides the main lean meat that forms the body of the sausage.
Fat pork
Adds fat that keeps the sausage juicy and carries flavor during frying.
Powdered sage
Adds the dominant savory, herbal aroma typical of pork sausage.
Black pepper
Adds sharp, aromatic heat that balances the rich pork fat.
Salt
Seasons the meat and helps bind the ground mixture together.

The step that matters

Fry until brown, turning once. Frying in a clean, dry pan browns the surface through the Maillard reaction, building flavor. Turning only once helps the sausages keep their shape and brown evenly.

Swap the mace

How well each one fits the dish's main ingredients (pork, sage, pepper, nutmeg):

  1. Marjoramfits better
  2. Thymefits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against pork, sage, pepper, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
