  1. Truss the turkey properly and stuff it with a mixture of butter, grated bread, lemon peel, parsley, sweet herbs, pepper, salt, nutmeg, cream, and egg yolks.

  2. Work the stuffing well together and fill the turkey's cavity.

  3. Prepare a brisk fire and place the turkey down, covering the breast with paper.

  4. Cook until nearly done, then remove the paper, dredge the turkey with flour, and continue basting until fully cooked.

  5. Serve a large turkey with gravy, brown celery, or mushroom sauce; serve a smaller turkey with gravy and bread sauce.
