Butter-making
Ingredients
Directions
Stop the churn when the butter is in small granules, no larger than a grain of wheat.
Draw out the buttermilk and add cold water to wash the butter.
Repeat until the water runs clear.
Make a brine and pour it into the churn.
Turn the churn enough to mix the brine with the butter.
Remove the butter from the churn and work it just enough to remove excess brine.
Shape the butter into rolls or prints for packing.
