Cottage Cheese Omelet

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the eggs

  1. Beat the yolks and whites of the eggs separately.

  2. Mix the yolks with salt, milk, cottage cheese, and pimientos.

  3. Fold in the stiffly beaten egg whites.

Cook and serve

  1. Melt fat in a hot frying pan and pour in the egg mixture.

  2. Cook slowly until the egg sets, then place in a 400°F (200°C) oven for a few moments to finish cooking.

  3. Fold the omelet in half and garnish with parsley.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites trapped as foam give the omelet its light structure, and the yolks set it as it cooks.
Cottage cheese
Adds moisture and soft curds that keep the omelet tender.
Milk
Thins the yolk mixture and adds moisture for a softer, more tender set.
Baking soda
Lifts the egg mixture slightly, helping it puff and stay airy.

The step that matters

Fold in the stiffly beaten egg whites. Whites must be beaten to stiff peaks and folded gently so the air is kept. Overmixing deflates the foam, leaving a dense omelet instead of a light one.

Swap the parsley

How well each one fits the dish's main ingredients (egg, cottage cheese, milk):

  3. Dillfits better
