What each ingredient does

Cottage cheese
Provides the main body and creamy filling of the balls.
Mashed potatoes
Adds bulk and softness, helping the balls hold a tender interior.
Flour
Thickens the milk into a white sauce that binds the mixture.
Egg
Binds the coating so the bread crumbs stick and set during frying.
Bread crumbs
Form a crisp, golden coating when fried.

The step that matters

Fry in a kettle of deep fat until golden brown. The balls are soft inside, so the coating must brown fully on the outside before the interior overheats or the coating breaks open. Hot, deep fat sets the crust quickly and keeps the ball from absorbing excess oil.
