What each ingredient does

Cottage cheese
Provides the soft, moist body that the roll is built around.
Cold cooked rice or bread crumbs
Absorbs moisture and firms the mixture so it holds its shape.
Grated cheese
Adds richness and savoury flavour and helps bind the mixture.
Horseradish
Adds a sharp, pungent bite that cuts the richness of the cheese.
