What each ingredient does

Calf's liver
Is the main dish, cooked quickly by frying so it browns on the outside while staying tender.
Fat salt pork
Adds fat and savoury flavour to the lean liver as it cooks.
Flour
Browned and boiled into the gravy, it thickens the liquid so it coats the liver.
Onion
Adds savoury, aromatic flavour to the gravy.
Lemon juice
Adds acidity that brightens the rich liver and gravy.

The step that matters

Soak the liver to draw out the blood. Soaking in salted water draws out surface blood, which otherwise tastes metallic and can make the liver look grey and dull when fried.

Swap the lemon

How well each one fits the dish's main ingredients (liver, pork, onion, pepper, flour):

  1. Limefits better
  2. Avocadofits better
  3. Lemonthe original
  4. Cherryfits about as well

Fit is the average pairing score against liver, pork, onion, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
