What each ingredient does

Cucumbers
Form the bulk of the ketchup and give it fresh, watery body.
White onions
Add sharp, savoury flavour and aroma to the mixture.
Mustard seed
Adds pungent heat and a slightly crunchy texture.
Whole pepper
Contributes warm, aromatic spice.
Vinegar
Adds acidity and tang, and helps keep the ketchup preserved.

The step that matters

Salting and draining overnight. Salt draws water out of the grated cucumbers and onions. Draining thoroughly removes that liquid, so the ketchup is thick rather than watery and keeps better in the jar.

Swap the onion
