Timbale

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Boil water in a pot and cover it.

  2. Keep the pot on moderate heat or in a 350°F (175°C) oven for one hour.

  3. Once the timbale is inverted onto a plate, surround it with a chain of white mushrooms.

  4. Garnish the top with a small bunch of two mushrooms.

  5. Pour a little Madeira sauce at the bottom of the plate.

  6. Serve additional Madeira sauce separately in a sauceboat.

  7. Optionally, fill the timbale with a ragout of chicken scallops or foie gras, or a lean ragout with oysters, roe, and crawfish tails.
