Why it works: Vanilla and sugar are a kitchen classic. They rank in the top 8% of all ingredient pairs, and cooks put them together in 35,032 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓
Charlotte De Marrons, Au Chocolat
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Preheat the oven to 350°F (175°C).
Prepare a madeleine batter and spread it on a baking sheet lined with parchment paper, about ½ inch thick and 18 inches long.
Bake until just set and slightly moist.
Remove from the oven and let cool.
Cut the madeleine into strips to form the base of the charlotte.
Assemble the charlotte by lining a small, slightly conical mold with the madeleine strips.
Fill the center with a cream made from fresh walnuts, vanilla, and whipped cream.
Decorate the top with additional whipped cream using a piping bag.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
