Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Thicken the dressing as they cook and set, giving it a creamy body.
Butter
Adds richness and smoothness to the dressing.
Vinegar
Adds acidity that sharpens the flavor and balances the richness.
Mixed mustard
Adds sharp flavor and helps emulsify the dressing.

The step that matters

Stir over boiling water until the mixture thickens to the consistency of cream.. Eggs thicken as their proteins set with heat, but overheating can curdle them. Gentle heat in a double boiler keeps the dressing smooth.
