Almond Cream Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, cream together the sugar and butter.

  3. Add the flour, milk, egg whites, cream of tartar, baking soda, and almond extract. Mix well.

  4. Divide the batter into 4 layers and bake until golden.

Make the filling and assemble

  1. Whip the thick cream to stiff peaks.

  2. Fold in the powdered sugar, chopped almonds, egg whites, and vanilla.

  3. Spread the cream over the cooled cake layers.

What each ingredient does

Butter
Creams with sugar to trap air and give the cake a tender, rich crumb.
Egg whites
Provide structure and lift as the batter sets in the oven.
Flour
Forms the main structure of the cake as the proteins set during baking.
Baking soda
Reacts with acid in the batter to produce gas that helps the layers rise.
Thick cream
Whipped to stiff peaks, it forms the light, rich filling that coats the layers.
Blanched almonds
Add nutty flavor and body to the cream filling.

The step that matters

Whip the thick cream to stiff peaks. Cream under-whipped stays runny and won't hold the filling, while over-whipping turns it grainy and can cause it to separate. Stopping at stiff peaks gives a spreadable, stable filling.
