Why it works: Tomato and rice match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 3,065 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Stuffed Tomatoes

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Cut the tops off the tomatoes and scoop out the insides.

Stuff and bake

  1. In a bowl, mix the rice, cheese, onion, salt, and pepper.

  2. Stuff the mixture into the hollowed tomatoes.

  3. Place the stuffed tomatoes in a baking dish and dot with butter.

  4. Bake for 25-30 minutes until the tomatoes are tender.

What each ingredient does

Tomatoes
Hollow shells that hold the filling and soften as they bake.
Cooked rice
Bulks out the filling so it holds its shape inside the tomato.
Grated cheese
Melts into the filling, adding richness and savoury flavour.
Butter
Adds fat and helps the tops brown lightly in the oven.
