Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the cream as they heat and add richness.
Isinglass
Gelatin-like setting agent that firms the cream as it chills.
Cream
Provides fat and richness, giving the set cream a smooth, soft texture.
Sugar
Sweetens the cream and adds body to the mixture.

The step that matters

Adding the isinglass while whisking. Isinglass must be dissolved and stirred in evenly while whisking so it disperses without lumps. Added unevenly, it sets in clumps and the cream will not chill smoothly.

Swap the almond

How well each one fits the dish's main ingredients (cream, sugar, egg, vanilla):

  1. Almondthe original
  2. Chestnutfits about as well
  3. Hazelnutfits about as well
  4. Macadamia nutfits less well

Fit is the average pairing score against cream, sugar, egg, vanilla. Candidates are from the same food group and used in at least 100 recipes.
