What each ingredient does

Pearl barley
Releases starch and soluble fibre into the liquid as it simmers, giving the drink body and a mild, thick texture.

The step that matters

Boil down the mixture to 1 quart. Simmering evaporates water and concentrates the dissolved barley starch and flavour. Stopping too early leaves a thin, weak drink, while boiling too long makes it overly thick and strong.
