What each ingredient does

Legs of meat
Their collagen breaks down during long boiling, releasing gelatin that helps the mixture set when cooled.
Upper head of meat
Adds meat and collagen-rich connective tissue that contributes to the gel and the firm, sliceable texture.
Lean meat
Provides the chopped meat bulk and tender texture that contrasts with the gelatinous binding.
Vinegar
Adds acidity that sharpens the flavour and balances the richness of the meat and gelatin.

The step that matters

Boil the legs until tender, with plenty of liquid. Collagen in the legs must break down into gelatin for the head cheese to set. Too little liquid or too short a boil leaves the meat tough and the cooling broth too weak to hold it together.
