Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the loaf and gives it its meaty texture.
Bread crumbs
Absorb moisture and help the loaf hold together as it sets.
Eggs
Bind the mixture and help it set firm when baked.

The step that matters

Press the mixture firmly into the dish. Packing the mixture well removes air pockets and helps the loaf hold together, so it slices cleanly instead of crumbling once baked and cooled.

Swap the sage

How well each one fits the dish's main ingredients (veal, bread, egg, pepper, butter):

  1. Parsleyfits better
  2. Nutmegfits about as well
  3. Sagethe original
  4. Tarragonfits about as well

Fit is the average pairing score against veal, bread, egg, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
