What each ingredient does
- Corn starch
- Thickens the cream mixture into a smooth sauce that holds around the oysters.
- Butter
- Adds richness and a silky mouthfeel to the cream and keeps the shells from sticking.
- Cream
- Gives the mixture body, richness and a mild sweetness.
- Milk
- Provides liquid and a lighter dairy flavour that the thickener sets into a sauce.
- Oysters
- Provide the main briny flavour and tender texture at the centre of the dish.
The step that matters
Adding the corn starch off the heat. Starch must be stirred into the hot mixture off the heat, with cold milk first, so it thickens smoothly without lumps. Adding it straight into boiling liquid can clump it unevenly.
