Orange Cake

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, cream together the butter and sugar.

  3. Add the egg yolks and grated orange rind, mixing well.

  4. In another bowl, beat the egg whites until stiff peaks form.

  5. Sift the baking powder with the flour and add to the mixture alternately with the sweet milk.

  6. Fold in the beaten egg whites gently.

  7. Pour the batter into jelly tins and bake until golden.

  8. For the filling, beat the leftover egg white to a froth, then add a little sugar and the juice of the orange.

  9. Spread the filling between the layers of cake.
