Ingredients

Directions

The book gives no oven temperature. The 325°F (165°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat the oven to 325°F (165°C).

  2. In a large bowl, cream together the sugar and butter until light and fluffy.

  3. Add the eggs one at a time, mixing well after each addition.

  4. Stir in the cold water.

  5. In a separate bowl, combine the flour and baking powder.

  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

  7. Fold in the hickory or walnut kernels.

Bake

  1. Pour the batter into a greased cake pan and bake for about 30-40 minutes, or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creaming with sugar traps air and adds richness and tender texture.
Eggs
Add structure and binding, helping the cake set as it bakes.
Flour
Forms the main structure of the cake once baked.
Baking powder
Releases gas during baking, helping the cake rise and become light.
Sugar
Sweetens the cake and helps create a soft, tender crumb when creamed.
Hickory or walnuts
Add nutty flavor and a crunchy texture throughout the cake.

The step that matters

Mixing after adding the dry ingredients. Once flour is added, overmixing develops gluten and makes the cake tough and dense. Mix only until the flour is just combined.

Swap the walnut

How well each one fits the dish's main ingredients (sugar, butter, flour, egg):

  1. Almondfits better
  2. Macadamia nutfits better
  3. Chestnutfits about as well
  4. Walnutthe original

Fit is the average pairing score against sugar, butter, flour, egg. Candidates are from the same food group and used in at least 100 recipes.
