Onions to Pickle

Ingredients

Directions

  1. Peel and wash the small onions, trying to keep them as uniform in size as possible.

  2. Sprinkle the onions generously with coarse sea salt.

  3. Pour boiling water over the onions to cover them, stirring to dissolve the salt.

  4. Cover and let the onions stand for 24 hours.

  5. Transfer the onions to jars and pour boiling cider vinegar over them, adding whole peppercorns and mustard before boiling.
